- Step 1
Prepreparation
Soak 1 tbsp moong dal for 2 hours and grind coarsely
- Step 2
For Dates Chutney
Soak 3/4 tbsp chopped dates until soft.
- Step 3
Grind soaked and chopped dates,1/3 tsp saunf, 1/8 tbsp jaggery powder, 1/8 tbsp dry mango powder, 1/8 tsp red chilli powder, 1/8 tsp dry ginger powder and 1/8 tsp black salt to a smooth chutney.
- Step 4
For Stuffing
In a bowl, add crushed dal, 1/4 tsp jeera, 1/4 tsp saunf, 1/8 tsp hing, 1/2 tsp ginger garlic paste and 1/4 tsp salt
- Step 5
Give it a Nestle twist by adding muskmelon seeds.
- Step 6
Add 1 tsp dry mango powder, mix well and keep aside.
- Step 7
For Dough
Knead a semisoft dough with 2 tbsp wheat flour, 1 tbsp suji, 1/4th tsp salt, 1 tsp oil and water as required. Cover and rest the dough.
- Step 8
For Kachori
Roll the dough, fill the stuffing, fold and seal.
- Step 9
Make into 4 balls.
- Step 10
Heat oil for frying and deep fry the kachoris.
- Step 11
Serve hot with dates chutney.
