- Step 1
For Palak Frankie Base
In a bowl add 2 tbsp maida,1 tbsp whole wheat flour, 1/8th tsp salt,1/8th tsp baking powder,1/2 tsp butter,1 tbsp palak puree and mix it well.
- Step 2
Add water as required and knead into a soft dough.
- Step 3
Roll out dough into a round roti, place on a heated and then roast from both sides.
- Step 4
For Frankie
Place palak roti on a plate and spread 1 tbsp mayonnaise.
- Step 5
Add 1/4th cup julienne lettuce,1/8th cup grated tofu,1 tbsp boiled sweet corn,1/8th cup julienne carrot and 1/8th cup julienne capsicum.
- Step 6
Sprinkle 1/2 tsp black pepper and 1/8th tsp salt. Roll with your hand tightly.
- Step 7
Serve.
