- Step 1
For Massaman Curry Paste
In a grinder add roasted coriander seeds, roasted cumin seeds,1/8 tsp white peppercorn,1/3 tsp cinnamon,1/8 tsp nutmeg powder,1/8 tsp green cardamom powder,1/8 tsp cloves powder, 2 no. dry red chili and grind it in a fine powder.
- Step 2
Add into the 1/8 cup diced onion, 2 tbsp chopped lemongrass,1 tbsp chopped garlic, 2 tbsp chopped coriander leaves,10g chopped galangal and grind it in a smooth paste.
- Step 3
For Chicken Curry
Heat 1 tsp oil in a pan add into the 1 tbsp diced onion and saute it well.
- Step 4
Add into the 1 tsp prepared massaman curry paste,1.25 tbsp coconut milk, diced chicken, water as required,1/2 tsp soya sauce, mix and cook it well.
- Step 5
Garnish with 1/2 tbsp chopped coriander leaves and serve hot.
