In a bowl, add 2 tbsp mashed potato, 1 tbsp grated carrot, 1 tbsp chopped cabbage, 1 tbsp chopped capsicum, 1 tbsp chopped onion, 1 tsp chopped coriander leaves, 1/4 tsp red chilli powder, 1/2 tsp garam masala, 1/4 tsp salt, 1 tbsp bread crumbs and mix well.
- Step 2
Take a portion and shape each into equal fingershaped cutlets.
- Step 3
Coat each with 1/2 tbsp bread crumbs, and keep aside.
- Step 4
Heat 1 tbsp oil in a pan and shallow fry the veggie fingers till crisp.
- Step 5
Serve hot with ketchup or any chutney.
