For Pickle Masala
In a grinder add 1/2 tbsp mustard seed,1/2 tsp fennel seed,1/8 tbsp ajwain,1/8 tsp fenugreek seed,1 tsp red chili powder,1/8 tsp black salt,1/8 tsp salt,1/2 tsp turmeric powder,1/2 tsp asafoetida and grind it in a fine powder.

For Jackfruit Pickle
In a mixing bowl add diced raw jackfruit,1/8 tsp nigella seed, pickle masala,1/2 tbsp mustard oil,1/2 tbsp apple cider vinegar, and mix it well.

Pour pickle in an airtight container and store it.
