Steps
- Step 1
For curry
Heat 1 tsp oil
- Step 2
Add 1 tbsp chopped garlic, 1 tsp chopped red chilli, saute till golden brown.
- Step 3
Add 1/8 cup julienne onion, 1/8 cup diced yellow capsicum, 1/8 cup diced mushroom, 1/8 cup diced carrot, 3 broccoli florets and saute well.
- Step 4
Add 1/2 cup coconut milk, 1/8 salt, 1/4 tsp black pepper powder.
- Step 5
Allow to simmer, add 3 basil leaves on top.
- Step 6
For fried rice
In chicken strips, add 1/2 tsp soya sauce, 1/8 tsp salt, 1/4 tsp black pepper powder,

Mix and set aside.
- Step 8
Heat 1.5 tsp oil in a kadai and stir fry chicken strips.
- Step 9
Heat remaining 1.5 tsp oil, add 1 tbsp chopped onions and saute till golden brown.
- Step 10
Add 1 egg, 1/4 tsp green chilli paste and mix well.
- Step 11
Add cooked rice, 1/4 tsp black pepper powder, 1/8 tsp salt, 1/2 tsp soya sauce, 1 tbsp chopped spring oinion, chicken and mix well.
- Step 12
Cover & cook for 2 min.
- Step 13
Serve with red thai curry.
